I served mine on cauliflower rice but if you eat rice then feel free to use white or brown. Let me know what you think!
Last Friday on my day off I wanted to make a whole 30 approved dinner. I went with what the website called General Tso's chicken. But believe me this is unlike any General Tso's you have eaten before. Be sure to have a glass of milk at the ready when you eat it or you'll have steam coming out of your ears it's so spicy. Check it out at http://www.katrina-runs.com/paleo-general-tsos-chicken.

I totally fail you guys. I'm such a crappy blogger. I try and try to be consistent! But you know, sometimes I'd rather browse the many pages of Pinterest and veg out than edit pictures and try to be witty. I've done a lot since I last posted so make sure to check out the front page for the updates! I'll update a little here but it will be brief. COLOR RUN IS COMPLETED! I may not have run the whole way but I finished. I had a lovely group of work ladies cheering me on. And to those who say I got barely any color on me.....believe me you're wrong.
You guys....I'm excited about this one. This book kind of goes against my past history with books. I normally go for authors like Nicholas Sparks or Nora Roberts. Harry Potter and A Little Princess are favorites. I love books set in the south like To Kill A Mockingbird or The Help. So reading a mystery set in present day is kind of out of the ordinary. I first decided on reading this book because 1) the author has a cool name, 2) the book I wanted by this author was all checked out from the library, and 3) a movie is being released this year based on this book. (Hello Ben Affleck, Rosamund Pike, and Neil Patrick Harris!) Part One begins in the point-of-view of the husband, Nick, in present day and then to the diary of his wife, Amy, which is from five years before. One day Nick comes home to find his house turned upside down and his wife missing! All signs point to the conclusion that Nick killed her. But did he? Part Two comes along and everything you may have originally thought is wrong. I was a little dissatisfied with the ending but I'm very much looking forward to the movie! I can't wait to read others by Gillian Flynn! ~Katelyn~ As I sit here watching the Academy Awards I thought it fitting to post about Dead Poets Society. It was nominated for Best Picture in 1989 losing, however, to Driving Miss Daisy. As always, I love a good coming-of-age movie. I liked seeing Robin Williams in a movie where he's not wild and crazy. AND WEIRD! As I'm writing this, a commercial is on the television for a new iPod or something and you hear Robin Williams with a quote from DPS!! Anyhow, apparently I have a thing for quirky, heartwarming films. This is one of them. I laughed....I cried...I awwwwwed. Robin Williams plays a brilliant English teacher in a stuffy prep school where you must follow the rules and grow up to be doctors, lawyers, etc. Professor John Keating helps them to (heehee) question authority and appreciate the beautiful things: poetry, drama, music, passion, romance! O Captain! My Captain! By Walt Whitman O Captain! my Captain! our fearful trip is done, The ship has weather’d every rack, the prize we sought is won, The port is near, the bells I hear, the people all exulting, While follow eyes the steady keel, the vessel grim and daring; But O heart! heart! heart! O the bleeding drops of red, Where on the deck my Captain lies, Fallen cold and dead. O Captain! my Captain! rise up and hear the bells; Rise up—for you the flag is flung—for you the bugle trills, For you bouquets and ribbon’d wreaths—for you the shores a-crowding, For you they call, the swaying mass, their eager faces turning; Here Captain! dear father! The arm beneath your head! It is some dream that on the deck, You’ve fallen cold and dead. My Captain does not answer, his lips are pale and still, My father does not feel my arm, he has no pulse nor will, The ship is anchor’d safe and sound, its voyage closed and done, From fearful trip the victor ship comes in with object won; Exult O shores, and ring O bells! But I with mournful tread, Walk the deck my Captain lies, Fallen cold and dead. Beautiful, but I know from my English 151 class that what I think it means is usually wrong. So on the last library trip, Mom handed me this book and said, "I made a note in my phone about this book, but I can't remember who it was for." So I took it home and read it. It's a young adult novel that actually doesn't have vampires or werewolves in it. A teenage girl is left 13 envelopes by her aunt who has recently passed away. She was given simple instructions. Do what the envelopes say. So she traveled all around Europe meeting people that her aunt knew and seeing the sights. It was a cute book but highly unrealistic in my book. Would you let your 16-year-old daughter go to Europe alone?? I wouldn't. And of course within the first few days of her being there she meets a cute, British boy who is the "love" interest. Somehow he is completely reliable and trustworthy within 5 minutes of her knowing him. I do think it's a cool concept though. I would love to travel around Europe for a summer. So if anyone would like to leave me a bank account full of Euros, please feel free! You know what bugged me though really in this book? The last, flippin envelope was stolen and she never found out what it said!! ~Katelyn~ P.S. Apparently, boys in Rome (no matter how handsome) are after one thing only and are not to be trusted. Here's to finishing two more goals!!
In 30 days I have now completed my abs challenge. That's a total of 2000 sit ups!! Wooooohooooo!!!!! I used not to be able to do sit ups alone. Now I can bust 'em out! Also, I went Twitter free this past week. This is by far the easiest goal completed. Why do I even have a Twitter? Hello dear internet lovelies! Soooo sorry it's been quiet on the homefront. I am currently in the middle of several goals and three should (hopefully) be completed within a month! They are:
I got some special whitening toothpaste and accelerator to whiten my ole chompers. It was a thirty day supply that I wanted to try so I've been using it for a little over two weeks and I actually think I can see a little difference around my canine toothage area. Once the special toothpaste is gone I'll switch over to a cheaper regimen. Now that I've gotten into a good routine and habit we'll see what ole Crest or Colgate can do for me. Also, I gave up on Jack Kerouac. Whatever list I found that said that's a book to read in your 20s was wrong. It was supposed to be about the author's life as he traveled around the states writing. All it mainly was was a boring retelling of his drinking and cavorting with ladies (married and unmarried) if you know what I mean. Ergo, not my kind of book. So I turned to Gillian Flynn who so far not only has a cool name but has delivered a far more entertaining book. So any suggestions as to something I try and tackle next? Book suggestions? Craft suggestions? I'm all ears! ~Katelyn~ Hello internet! Nice to talk to you again! Just wanted to throw some updates atchya! I started a sit up challenge so I can knock the abs challenge off my list. I've never really been able to do sit ups on my own before so this is kind of cool. I also hold my kettlebell while I do them so I figure I'll have nice shoulders by the end of it too. Here's the one I'm following if anyone wants to join: I also had a great day off from work on Saturday so I took advantage of it by sitting in Starbucks sipping on coffee for an hour or two and then hitting up the library. I am (not-so) patiently waiting for a copy of Mary Poppins to finally make its way back onto the shelves but alas. Tis hard indeed. However, I decided to be very ambitious with my book reading and got 5 (count 'em) books! Mind you, one is a darling little cookbook filled with authentic French recipes and one is a young adult book but the three others are On The Road by Jack Kerouac, East of Eden by John Steinbeck and Gone Girl by Gillian Flynn. Not for the faint of heart!
Approximately 32 minutes 17 seconds ago I registered for the Run or Dye color run! It finally came near me so I figured now was as good a time as any. I made a team with some friends from work and we're going to bust it out! Plus it's 3 1/2 ish months away so this should motivate me to get my lazy bum out of bed and head to the gym to run. ~Katelyn~ P.S. I should get reading now. Ole Jack Kerouac has a funny way of writing. So, I've never liked my skin. I could never get that glowly, hydrated, smooth, even complexionedness that I craved. I was like Anne Shirley; always wanting that rose leaf complexion. But who has the time (or money) for a facial? I mean what good could they really be?
Truth is? A lot. Picture this: you're in a comfy gown, laying under a blanket on a heated bed. The lights are dimmed low and there's peaceful music playing. Your face is being massaged....lotion....exfoliation.....lotion.....exfoliation....more lotion. Add in some extractions and you've got a good time! It's amazing how much better your skin can look and feel in hour. My face had never felt so smooth! Apparently when your face is hydrated it makes it smooth. So for the past three and a half days I have been following a better skin routine so that starts my two months of washing my face morning and night! I know I should have been doing that all along but well.....I wasn't. Moral of the story. Get a facial. Your skin will thank you for it. Plus while the mask is on your face you get a nice hand massage. ~Katelyn~ |
